Sauveroy estate is located in the heart of the Coteaux du Layon in Saint-Lambert-du-Lattay. Created in 1866, the vineyard belongs to the Cailleau Family since 1947. The vineyard has been well change and is now a winery of reference in the Loire Valley in terms of quality and styles of wines.
Pascal Cailleau, the last child of 8 sisters and brothers, took back the vineyard in 1984. After his studies in viticulture and oenology near Saumur, then an internship in Burgundy, Pascal Cailleau organize a wine trip in Sonoma Valley (USA) and work at Dry Creek Vineyard for the harvest. His wife, Veronique will join the adventure in 1987.
From 1 ha of vines in 1866, the Sauveroy estate will grow little by little to obtain 30 ha today. Enthusiastic winemaker from father to son, we are proud of our vineyard. All our work maintains the biodiversity and the quality of the wines we made.

As soon as his trip backs in 1984, he took the family estate over and set up new preventive measures in the vineyard. Wine enthusiast, he associate new technologies and ancestral knowledge in order to respect the environment and valorize the Terroirs. Pascal tries to be as thorough as possible in the vineyard and in the cellar to produce a perfect quality wine.
Since 1987, Véronique manage the administration department, accounting, staffs, logistics and the sales at the cellar. Creative, she likes to design new labels and creates new events for the winery.
Both, in collaboration with the winemaker, are assigned with the mission of managing the vineyard. The precision of their gesture will be determinant on the future harvest. Hugues and Jeremy prune, tie, crown, tie up, thin out the leaves and get the grapes ready to become ripe in the best conditions.

The story begins back in 1866 with only one hectare of vines and a Terroir of predilection. Sauveroy has been built in an old windmill where the wines were vinify by monks. In 1947, the Cailleau Family took back this amazing vineyard. Now, Sauveroy estate counts 30 hectares of vines.
Each member has the privilege and the responsibility to take care of this historic vineyard. From the parcel to the winemaking, all the year, the team has to maintain the biodiversity of this exceptional terroir.
The expertise of our Terroirs allows ourselves to protect and valorize the vineyard. The most natural way of growing grapes is always preferred. Protect the ecosystem means also to reduce the vigor of our parcels in order to obtain quality grapes, a well balance wine in perfect harmony with our expectation.
